Homemade Bakso



Bakso

You can find Bakso everywhere in Indonesia which are usually served in a bowl of beef broth, with noodles, beancurds, eggs, 'siomay'/steamed meat dumpling, and crispy wonton. It has a consistent homogeneous texture, and spices to it.

Recipe for Bakso

Ingredients for Bakso:
For the Meatballs:
  • 500g beef minced
  • 200g corn flour
  • 6 garlic clove, minced
  • ½ tsp baking powder
  • 5 egg white
  • ½ tsp pepper
  • Salt as needed
  • Water
For the Broth:
  • 1 kg beef ribs (bones) to make the stock
  • 1 bulb garlic
  • Salt as needed
  • 1/4 cup thin soy sauce (or regular soy sauce)
  • 1 tbsp black pepper
  • 3 litres water
For the Fried Wonton:
  • 1 cup all purpose flour
  • 1 tbs butter
  • 1 large egg
  • Water as needed
  • 1 tsp salt
  • Oil for frying
Condiment:
  • rice noodle blanced till soft (bihun rebus)
  • baby bok choy blanced 
  • celery leaf (daun seledri)
  • fried shallot (bawang goreng)
  • Indonesian sweet soy sauce (kecap manis)
  • ABC Chilli sauce (sambel ABC)
  • distiled vinegar (cuka)
  • fried wonton (pangsit goreng)
  • 1 tsp pepper
  • 1 tsp onion powder
Method:
  1. Firstly, sautee the garlic until softened.
  2. Pulse the sautéed garlic with the rest of the ingredients in the food processor 2-3 times until they all sticky and mixed together.
  3. Use spoons to scoop and shape into a round ball one by one.
  4. Boil some water, drop the meatballs in the hot water and when they start floating, that's when the meatballs are cooked.
Making the Broth: 
  1. In a pot, bring the water to boil.
  2. Put the beef ribs (bone) to make stock and the rest of the ingredients.
  3. Lower heat and simmer for 3-4 hours, removing any scum that surfaces. Add some water if you need to, to get certain amount of beef stock. To get 3 litres of beef stock, you may use 1 kg of beef bones. And that’s more than enough to get a good taste of authentic Bakso broth.
Making the Fried Wonton.
  1. Mixed all the ingredients until it form like a dough. Rolled thin and cut square.
  2. Fry wonton and set aside,
Now to make the Meatballs Soup
  1. Put the meatballs "bakso" in the beef stock
  2. Prepare all the condiment and arrange in a bowl serve it while its hot.
