Crispy Cashew Nuts (Icing Sugar, Spicy)



Microwaved Cashew Nuts. Easy snack to serve with drinks.

Recipe 1 for Crispy Cashew Nuts (Icing Sugar)
Ingredients for Crispy Cashew nuts:
  • 2 cups cashew nuts 
  • 2 cups water
  • 3 tbsp sugar
  • 4 tbsp icing sugar
  • 1 cup vegetable oil
Method:
  1. Pour cashew nuts in a casserole.
  2. Add 2 cups of water and sugar.
  3. Cover it and microwave at 'high' for 6 minutes. Strain.
  4. Put 1 cup of vegetable oil and cashew nuts in a heat resistant bowl.
  5. Microwave at 'high' for 5 minutes. Strain.
  6. Allow to cool and sprinkle with icing sugar.
Recipe 2 for Crispy Cashew Nuts (Spicy)
Ingredients for Crispy Cashew nuts:
  • 2 cups cashew nuts
  • 2 cups water
  • 3 tbsp sugar
  • 1 cup vegetable oil
  • fine table salt to taste
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp 5 spice powder
  • 1/2 tsp chilli powder 
Method:
  1. Pour cashew nuts in a casserole.
  2. Add 2 cups of water and sugar.
  3. Cover it and microwave at 'high' for 6 minutes. Strain.
  4. Put 1 cup of vegetable oil and cashew nuts in a heat resistant bowl.
  5. Microwave at 'high' for 3-4 minutes or until lightly browned. Strain.
  6. Quickly add 1/2 tsp five spice powder, chilli powder and black pepper. Mix well. Microwave for another 1 minute.
  7. Allow to cool, sprinkle with salt to taste. Mix well before serving.

  3. I added some garlic powder to the cashew nuts and omitted the spices. Kept in a jar.
