Prawn Dumpling Soup


Ingredients for Soup:
  • 4 cups Chicken or Vegetable Stock
  • 1 small ginger finely sliced
  • 1-2 fresh lemongrass
  • 3 spring onions, finely chopped
Ingredients for Prawn Dumplings:
  • 30 wonton wrappers
  • 200-250 grams shelled fresh or frozen raw prawns, deveined
  • 50 grams water chestnuts, diced finely
  • fresh ginger, peeled and finely sliced
  • salt and pepper to taste
  • sesame oil
  • 2-3 spring onions, finely chopped
  • Egg White 1/2

Instructions:
How to make the dumpling filling:
  1. Set aside 100 grams of the prawns and mince them into a rough dice.
  2. In a food processor, pulse the remaining prawns, ginger, half the water chestnuts, salt and pepper until it's quite smooth - spoon it out into a bowl. Add the remaining prawn, water chestnuts, a dash of sesame oil and spring onions - stir and mix well.
Make the dumplings:
  1. The filling should make about 30 dumplings. Place 30 wonton wrappers on a work surface lined with wax or parchment paper.
  2. Place 1 heaping teaspoon of the shrimp mixture in the center of each wrapper - Use a pastry brush or fingertip to brush the edges with egg.
  3. Fold it over the filling to form a triangle, then press the edges to seal. Repeat with remaining mixture and wrappers.
Make the soup:
  1. In a medium pot, bring the stock along with slices of fresh ginger and lemongrass - let this simmer for 20 minutes.
  2. Have the stock at a gentle simmer before adding a few of the dumplings, being careful not to crowd the pot. Simmer until the dumplings float on the surface and the shrimp inside turns pink (cut one in half to check), 3 to 4 minutes. 
  3. Use a slotted spoon to transfer the dumplings to a plate; set aside. Repeat with the remaining dumplings. Lastly, add the extra spring onion and serve hot.
