Recipe | Sambal Ijo Ikan Kering (Sambal Hijau)




Sambal Ijo is one of the best must have spicy green sambal from Padang, Indonesia. Super shiok with fried chicken, fish, eggs or petai.

Sambal Ijo


Ingredients:
  • 100 gram long green chillies, roughly cut
  • 5 green unripe tomatoes cut into halves
  • 100 gram shallot
  • 2 cloves garlic
  • 6 tablespoon oil (olive oil is a good choice)
  • salt and sugar to taste
  • 10 kaffir lime leaves, remove ribs and shredded
  • 2 tablespoon anchovies, fried until crispy

Instructions:
  1. Bring to steam green chillies, shallots, garlic and tomato for 5 minutes. Then grind (add anchovies if you like it blended) or blend roughly.
  2. Heat up the pan with oil and saute the mixture until fragrant. Add sugar kaffir lime leaves, (fried anchovies if like it whole), sugar and salt as needed. Mix well, and cook 5 minutes.
  3. Turn off heat, transfer to a serving bowl, and serve as a side dish to steamed white rice.
