Ingredients:
  • 150 g fresh medium size tiger prawns, shelled and deveined
  • 50 g petai, rinsed, halved
  • 7-10 dried chillies, soaked in hot water for 20 mins, grind to a paste
  • 3 tbsp chili paste
  • 1 tbsp light soya sauce
  • 2 tbsp lime juice
  • 3 cloves garlic, roughly chopped
  • 1 tbsp oyster sauce
  • 1/2 cup of water
  • Salt and sugar to taste
  • cooking oil
  • Coriander leaves for garnishing (optional)

Instructions:
  1. Fry prawns over high heat for about 1 minute and set aside. Do not over cooked.
  2. Heat some oil in a pan, saute garlic until fragrant, then add in ground dried chilli paste, 3 tbsp chili paste and saute till oil breaks through. Add in oyster sauce and light soya sauce and stir.
  3. Put in the petai and prawns, lime juice and 1/2 cup water. Reduce heat to low fire to thicken the sauce. Stir to mix well.
  4. Lastly, add salt and sugar to taste. Heat off. Garnish with coriander leaves.
  5. Serve Sambal Udang Petai hot with rice and other home cooked dishes.
