Pulut Pisang Recipe

Ingredients:
Ingredients A
  • 500 g glutinous rice
  • 300 ml water
  • 100 ml thick coconut milk
  • green colouring
  • 1 tsp salt
  • 2 pandan leaves
  • 5 jackfruit banana (pisang nangka) or banana tanduk
Ingredients B
  • 1/2 cups sugar
  • little water
  • 1 grated coconut
  • 1/4 tbsp salt
  • 1 pandan leaf

Instructions:
  1. Place glutinous rice in a pan and add water to cover. Mix in green colouring and soak overnight. 
  2. Drain soaked glutinous rice. Mix drained glutinous rice with pandan leaves, water, coconut milk and salt. Steam till rice is half cooked.
  3. Remove the glutinous rice and and let it cool. Take a little bit and place it on a plastic or banana leaf, press it flat and place the banana in the middle. Roll it neatly.
  4. Re-steam glutinous rice roll for 15 minutes or until cooked. Remove the plastic base and set aside.
  5. Meanwhile, cook sugar till dissolved with a little water, pandan leaf and 1/4 tbsp salt.
  6. Once it boils, pour the mixture over the grated coconut and mix well.
  7. Place steamed glutinous rice on the flavoured grated coconut and cut it into 3 to 4 portions. Serve.
